Scientists used to think that alcohol "melted" (not a scientific term) the nerve membrane in a reversible way, but today scientists are inclined to believe that alcohol has affinity for certain receptors for other chemicals in the brain. For example, alcohol is known to affect the GABA receptor, the NMDA receptor, and probably others to produce its myriad of behavioral and toxicological effects.
It was largely the monasteries that maintained the knowledge and skills during the Middle Ages necessary to produce quality alcohol beverages.
